本學院發展方向涵蓋健康促進、全齡照顧及人文關懷等三大領域，以培養健康與照顧專業人才、關懷弱勢與促進全人健康、推廣健康維護及保育照顧之生活為理念。期望藉由健康的飲食、保健食品及均衡的營養、適量的運動、舒適的景觀來達到健康照顧的功效；並由幼兒的全方位照顧到銀髮族的養生餐飲、保健食品及運動養生著手，不僅維持身體的健康，更搭配虛擬庭園的療癒技術和園藝治療等方法讓身體健康充滿活力，並培育出具有專業能力之人才。基於上述理念及方向，本學院將結合各系特點共同向健康與益康樂活領域，培育相關人才以服務產業，提昇在地產業的競爭力及品質，以達到產學合作、永續發展及經營之目標。

培育具備良好的景觀規劃設計、景觀營造施工、景觀庭園維護管理之能力與職場倫理觀念之景觀設計專業人才，並培養對公園、風景區及自然資源保育區開發和管理與兼具藝術美學、環境規劃之相關能力，以符合國家永續發展工程建設人才之需，並提升居住環境品質，使兼顧美感、健康、舒適與品味。
